Hey Evon!That's not a stupid qustoien! You can do either: refrigerate or freeze. You'll just need to be sure to let the buttercream warm up to room temperature before you try to use it again. Especially if it's been frozen you may need to re-beat it to make it fluffy again, but that's about all the work you'll need to put in. Buttercream keeps in the fridge for a week before it starts taking on funky flavors, but it will freeze for several months in an airtight container. And thanks for the terrific compliments! I don't know if I'll ever get around to a book, but you know where to find the recipes any time you need them! I'm not planning on going anywhere Cheers, - Joe
