If I had to pick one thing in this chapter that was most intseerting to me it would have to be Sickle Cell Anemia. I'd heard of this condition, but I never fully understood what it was about. I found it very intseerting that the red blood cells change to form a sickle shape. The red blood cells contain an abnormal form of hemoglobin, hemoglobin S. Long crystals will develop as the red blood cells deoxygenate and hemoglobin S forms cross links with other hemoglobin S molecules. This happens over and over as the oxygen is released from red blood cells and then the cells take on a sickle shape. These sickle shaped cells can clog up or block small arteries and capillaries, which leads to pain and tissue death. I also didn't realize that is is a painful disease.I found it eye opening how prevalent anemia is in the world. It didn't surprise me that in the United States we have a high occurence of folic acid deficiency anemia because of our raw vegetable and raw fruit consumption is low. It saddens me, but didn't surprise me. I think I will make extra sure that my family and especially my children learn to love their raw fruits and veggies!!
