He didn't spend a lot of time on the topic of evolution; he said, "All you need to know about the theory of evolution is that it says that 'Life changes.'"
He would often tell stories about when he was doing some study in South America, and there was a group of missionaries nearby working with some native tribe-or-other. (For some reason his group had a lot of dealings with these missionaries; I can't remember if he ever explained why.) Anyway, the missionaries were teaching their protégés to reject the dangerous theory of "EVILution," while at the same time trying to cross-breed two different kinds of cattle to produce hardier milk cows, thereby practicing the very evil they preached against.
I've always found that amusing.
