A knight can potentially move to 8 different spots. Granted, all of them will probably not be available each turn. However, you try to color in the squares by moving to them. Each time you move, you get a different array of squares you can move to.
Would a definition of a Knight's Tour help?
In the first level, there should be 4 gray squares. You must turn each of them colored by moving to them. However you can only make knight moves to reach them. I don't know. Perhaps Dhraak can explain it better, since he's already at level 5.
