Mmmmm I use Reason The program I use is called Propellerheads Reason v3.0 It's a pretty neat semi-professional piece of software that lets you create music instruments and load samples for them, or make one entirely yourself, and play them on a midi-keyboard. So I do that, record it in Reason sequencer and remove errors, copy and paste here and there, and voila. There's a longer version now at http://johandraaisma.nl/testamundo3.mp3 which is still not complete, but it's better than the first one you've heard.
